How do you make authentic Tex-Mex style beef enchiladas?

I'm talking about the real deal. Ground beef with a chili-style sauce. Not mole or red or green. Now that I moved away from Texas, I've never been able to find it like home in a restaurant, so I want to atleast be able to make it at home.
